How to make easy and Special Vegetable Kichidi Recipe

Ingredients:

Servings    2

Split Moong dal ( Pesara pappu) – ¾ cup
Rice – 1 cup
Water – 3 cups
Veggie Pieces (Potato, carrot, beans, green peas, corn kernels, tomato)
 Coriander leaves    few
Cloves    2
Cinnamon  1 inch piece
Cardamom,    2
Black pepper   4
Bay leaf         2
Cumin seeds – ½ tsp
Green chilli – 4
Curry leaves – few
Onion – 2  chopped
Salt – to taste
Turmeric – pinch
Oil – 2 tbsp
Ghee – 2 tsp



Directions


Wash and drain rice along with moong dal and set aside.

In a Pressure cooker add oil and ghee. When it is hot enough add whole garam masala, and cumin seeds. When cumin seeds splutter, add curry leaves, green chilli and fry then add onion and cook till they are soft.

Now add turmeric, salt, vegetables  and cook till they are half done.

Now add Rice and dal mixture, mix well and fry for 3 min.

Now add water, adjust salt and cook the rice till it is done.

Wait for the 2 whistles and let it cool down .

Garnish with fresh coriander leaves and it is ready to serve  as breakfast or  special dish in lunch
