 Potato Mixed with Menthi koora  Dry Curry Recipe

Ingredients

    1 large bunch Methi Leaves.
    2-3 small potatoes, scrubbed and cubed (I keep the skin on)
    1 onion, chopped (optional)
    1 inch piece of ginger, peeled and grated
    1 tsp cumin seeds
    1/2 tsp cumin-coriander powder
    pinch of turmeric
    pinch of asafoetida
    1/2 tsp -1 tsp chilli powder (as per taste)
    salt to taste
   

    Directions

     In a skillet, take 1 tsp oil and add cumin seeds.

     When the seeds brown, add asafoetida and then the onions. 

     When the onions get soft, add the grated ginger and turmeric.

     Cook for another 1-2 minutes.
           
     Now add the greens to the spice-onion mixture.

     Cook until the greens wilt and it becomes dry.

     Add the cubed potatoes, cumin-coriander powder, chilli powder along with salt.
   
     Mix well to combine.

     Reduce the heat to low-medium, cover and cook until the potatoes are tender.
   
     Make sure to stir occasionally to avoid it from burning. sprinkle little water, 
     stir and cook.

     Give it a quick stir before removing it from the flame.
    
     Serve it hot  with rice.
