Simple Aloo Ridge Gourd Mixed veg Curry Recipe For Roti/lallyrecipes

Ingredients:

250 gms Ridge gourd(Beerakaya)

2 to 3 Potatoes

3 tomatoes chopped

1 large onion chopped

2 green chillies

few curry leaves

2 tea spoons ginger garlic paste

1 tea spoon each rai, jeera and urad dal

salt to taste

1 tea spoon red chilli powder

1 tea spoon dhaniya powder

1/2 tea spoon haldi

few curry leaves

2 table spoons oil

Drections

Wash..and Remove the skin of Ridge gourd and chop to medium size pieces

Peal, wash  Potatoes and chop to medium size pieces

Heat 2 table spoons of oil in a pan.  Add rai, jeera and urad dal.

When rai starts spluttering add chopped onions, green chillies and curry leaves.

 Fry in a medium flame.  When the onions become transparent add ginger garlic paste.

 Fry for a while and add red chilli powder, dhaniya powder and haldi.  

Mix well and add chopped tomatoes.

  Add salt and cook  for 2 to 3 mins.  Now add chopped turai and aloo pieces. 

Mix well.  Close the lid and cook in a medium flame for 10 to 12 mins until the veggies are properly
cooked.  Switch off the flame.

Take the curry into a serving bowl and garnish with finely chopped coriander leaves.    
  Serve The Spicy masala Curry  is ready.
