How to make Delicious Spinach /Palak Kofta Curry
Ingredients
To prepare this Delicious Special Curry you need the following
For koftas
Fresh chopped and boiled spinach-1 Big bowl
Fine chopped Big Onion - 1 cup
Besan /Gram flour -1/2 cup
Red chili powder - 4 tbsp
Fresh grated ginger -1 tsp
Fine chopped Green chilli -2
Garlic pods - few
Baking powder & Hing -Pinch
Salt as per your taste
for gravy:
4 Medium sized onions
1 Tablespoon minced garlic
2 Tomatoes (blend it for puree)
1 Tbsp fresh grated ginger
2 Green chilies – Chopped
3 Tbsp fresh curd/plain yogurt
2 Tsp coriander powder
½ Tsp red chili powder
½ Tsp turmeric powder (Haldi)
½ Tsp garam masala powder
3 Tbsp vegetable oil
½ Cup of whole milk
½ Cup of chopped coriander leaves
Salt as per your taste
For garnishing
Fresh Coriander leaves and fried cashew nuts
Directions
In a large bowl add squeezed spinach,chopped onions, minced garlic, chopped green chilies, grated ginger, red chili powder, asafetida, baking powder and salt and mix.
Now add gram flour to the spinach mixture and mix everything together to the consistency for rolling the balls for koftas with the dough. Add littleome water if need or add more gram flour if dough is too soft.
Heat 2 cups of oil in a frying pan or a kadai on medium heat.While oil is heating up wet your palms and take a little portion of the dough at a time and roll into small balls.
Now Drop the balls in the hot oil and let them fry the balls around for 10 minutes on low heat so that inside of the balls get cooked and become golden brown.
for making the gravy
In a blender/Mixi jar add the onions and garlic to get a coarse paste then fry the paste on kadai by adding oil to it till the raw smell goes out.
While onion mixture cooks add the tomato puree. Once the onions become light brown add coriander powder, red chili powder, turmeric powder and mix with the fried onion and fry for few seconds.
Add water and salt, mix with onion masala, cover the pan and cook for few minutes. Add grated ginger, chopped green chilies and garam masala in the gravy and mix and let it cook.
Now add ½ cup of milk and mix it well with the gravy and stir constantly for 1 minute so that milk blend in well with the gravy. Let the gravy cook for 8 to 10 minutes, while frequently stirring the gravy. Milk binds the gravy with onion masala. then add fried spinach koftas in the gravy and mix, coat all the koftas with gravy and simmer for 3 minutes, turn the heat off.
Once koftas are soaked and gravy become thicker, add more water to the desired consistency, give a boil and turn the stove off.
Now Transfer koftas to a serving bowl and garnish with coriander leaves and fried Cashew nuts.Pour butter on it for enriching its tase
