Healthy Red Chori Beans with Amaranth Leaves Gravy Curry
Ingredients :
Chopped Amaranth Leaves : 2 cups
Red Chori Beans : 1/4 cup
Onion : 1 big sized
Garlic cloves : 2 or 3
Dried Red Chillies : 2
Mustard Seeds : 1/2 tsp
Chana Dal : 1/2 tsp
Urad Dal : 1/2 tsp
Turmeric Powder : 1/8 tsp
Red Chilli Powder : 1/2 tsp
Salt to taste
Oil : 2 tsp
Directions
Wash and soak the dal in water overnight.
Peel and chop the onion into small pieces and set aside.
Heat oil in a wok and add the mustard seeds, chana dal and urad dal and let them splutter.
Then add the red chillies and garlic cloves and fry for a minute.
Add the chopped onions and fry till the onions are translucent.
Now add the chopped amaranth leaves, soaked dal, salt and turmeric powder and mix well.
Cover with a lid and allow to cook on low a flame. Stir occasionally.
When it's done, switch off the flame and serve hot with roti or rice.
