Ingredients
3/4 cup rice
1/4 cup moong dhal
3and 3/4 cups of water
3 cups of milk
3 cups of jaggery
3/4 cup ghee
1/2 tsp. cardamom powder
Method
Dry fry moong dhal , till the milk fried aroma comes. Wash the rice and moong dhal together.
Pressure cook rice and moong dhal by adding 3 cups of water, leaving 6 whistles and simmer he cooker for 5 minutes.
In the mean time, dissolve the jaggery in 3/4 cups of water over the stove and filter it with a fine sieve to remove the impurities.
As soon as the cooker releases , mash the rice- dhal mixture by adding milk little by little without any lumps, and then add the remaining milk.
Place it over the stove in low flame and keep stirring it , till the whole quantity reduces to half.
By that time just bring the jaggery to one string consistency.
Add this rice-moongdhal mix to the jaggery. At first it will be watery. But slowly it will start becoming thick. Also add the ghee little by little.
Finally roast the cashew nuts to golden brown in ghee and add it along with 1/2 tsp. of cardamom powder to the chakkarai pongal.
