Ingredients
1 cup of Steamed rice
1/2 cup grated coconut
1 tbsp. urud dhal
1tbsp. broken cashew nuts
2 red chillies
2 strands of curry leaves
1/2 tsp of hing
2 tsp. of oil
1 tsp. ghee
Salt ( to taste)
Method
Spread the cooked rice in a wide bottom pan. See it to it that there are no lumps. Let it cool down.
Add 2 tsp ofto the wok. Once it is heated, add 1 tsp of mustard seeds and red chillies.
Let the mustard seeds splutter completely. We add the red chillies in the beginning itself, so that little bit of the spicy taste of chilli will be extracted in the oil.
Once the mustard splutters, add the urud dhal. Let it become golden brown.
Then add the curry leaves and then the coconut and sauté for five to seven minutes or till the white colour of the coconut changes to little bit pale yellow. At last add the hing and mix well. Set them aside.
Again add 1 tsp. of ghee to the pan and fry the cashew nuts till they are golden brown.
Now mix the fried coconut, cashew and required salt along with the rice. This rice requires very less amount of salt.
Set aside few fried cashes and curry leaves. Garnish it at the time of serving.
